RR: Ina’s Turkey Meatloaf


Ina’s meatloaf is pretty basic, so I haven’t the slightest idea what steps it above all the other meatloaves I’ve tried….but it’s at the top of our list!

This recipe is incredibly simple. Saute the onions in olive oil, salt pepper and thyme, mix them into the turkey with everything except the ketchup, form it into a loaf, and bake it! Easy!

Ina’s meatloaf is HUMUNGOUS, so I cut her recipe into fifths in to make it a reasonable size for us. Here are the amounts for 1/5 of her recipe:

1lb ground turkey (the turkey is wonderful in this. Give it a chance!)

2/3 cup chopped onion

4t olive oil

a pinch of kosher salt

a pinch of black pepper

a pinch of dried thyme

1T worcestershire

2.5T chicken stock/broth

1/2 tsp tomato paste

5T bread crumbs

I just used some egg whites we had hanging out in the fridge, but you could beat up an egg and use half or something.

And ketchup slathered on top at whatever amount looks good to you!
