RR: Gina’s Chicken Thighs with Red Wine Vinegar and Shallots


This recipe jumped out at me as soon as it was posted.  I had everything necessary in my kitchen! Perfect weeknight dinner.

Gina’s Skinless Chicken Thighs with Red Wine Vinegar and Shallots, I know, the red wine vinegar sounds a bit strange – but it doesn’t taste vinegary at all! I promise.

Here are your ingredients:

First, I sliced up my shallots and garlic. The garlic just kinda melts into the sauce, so there won’t be giant pieces of garlic anywhere.

Then combine your vinegar, honey, 3/4 of the chicken broth and tomato paste in a saucepan and reduce it.

While that’s reducing, season your chicken with salt & pepper and brown it up in some olive oil.

Once the chicken is browned, set it aside and saute the shallots and garlic for a couple minutes (forgot a picture, sorry), Then add the chicken back to the pan and pour the reduced sauce over it.

Then cover and let simmer for 20 minutes. Then remove the chicken again and stir in the sour cream. Boil the sauce to reduce it to your preference.

Then add the chicken back to the pan, and serve! We had it with some broccoli and leftover roasted garlic mashed potatoes.
