Spaghetti, Our Way


Yes, I know. Spaghetti is easy and basic. It’s a go-to for just about everyone, and a great way to feed a crowd. The usual standard of mushy white noodles and plain sauce just doesn’t work for me though. Here’s our way. Still simple, but better (in my opinion anyway)!

Ingredients:

1lb italian seasoned turkey breast

whole wheat spaghetti noodles (these have much better texture and flavor than regular!)

Spaghetti sauce (Prego) – to taste.

and here I have:

2 cloves garlic, minced

1.5 onions, chopped (normally I’d just use 1, but we had a half languishing in the fridge)

1 red bell pepper, chopped

Almost a full package of mushrooms, sliced

1 small zucchini, cubed.

First, heat up some water for the noodles

Then, start your sauce by heating some olive oil in your pan, and dump in the onions, red peppers and turkey breast.  Stir it around until the turkey is browned. Then add your remaining veggies (garlic, mushroom and zucchini) and heat until the zucchini and mushrooms are soft.


Then dump in whatever amount of Prego (or whatever sauce floats your boat)  gets you the sauciness you like and simmer, covered, until your noodles are done.


Then, portion it out and serve!  This particular time, we got about 7 servings.  Easy to grab and reheat for lunch!
