Breakfast Quesadillas


This is one of those things that tends to come together when I have no idea what to make for breakfast.

This time two servings was:

2 whole wheat Flatouts

1 link Jennie-O Hot Italian Sausage

Mushrooms

1/2c colby jack cheese

2 eggs

Brown up the sausage, and add the mushrooms once it’s brown. Saute until the mushrooms start to get soft.

Then scramble up some eggs and add them to the pan.

Put a layer (1/8c) cheese on one side of the flatout, add half the filling and top with another 1/8 cup.

Then fold it over and grill it up! We used our Griddler, but you can always make it in a pan like a normal quesadilla.

A good quick breakfast!
