We had a late night the other week, so instead of the recipe I had planned (which would have taken a bit of time) I threw together this Pad See Ew from Serious Eats using ingredients we already had in our pantry/freezer. As you can see, I used shrimp (sauteed, not boiled like the recipe suggests with the chicken) green beans, and thinner rice noodles instead because that’s what we had – it still worked beautifully!
We loved this. It’s a quick, easy, light dinner for a busy night. I almost wish I had made more than two servings. Now I want it again! Maybe I’ll have to make it for dinner sometime next week….
